Coffee-Flavored Liqueur

5 cups sugar
1 (2-ounce) jar instant coffee powder
4 cups boiling water
1 quart unflavored vodka
1 vanilla bean
Combine sugar and coffee; pour boiling water over mixture; stir occasionally, and let cool. Stir in vodka. Pour mixture evenly into 3 quart-size glass bottles or jars. Cut vanilla bean in 3 parts; place 1 piece in each jar. Cover and let stand 12 days. Strain and transfer to decorative bottles. Enjoy!
