Dry Dock Oyster Bar in San Antonio, TX – Here’s what I had at the Dry Dock Oyster Bar, a cup of Seafood Gumbo and an Oyster Po Boy. The gumbo was not bad but I always find it too dark. Comes from over cooking the roux at the start. Good taste with the right amount of spice.
My blood is Louisiana Cajun so I have high expectations but gumbo should not be a black brown color. Also the primary ingredient should not be celery. Didn’t quite understand that. I understand the differences between tomato base and okra base gumbo but prefer okra and their gumbo did seem to have it. Disappointing was the micro-dime size shrimp that was used instead of just shrimp. Just makes it seem fake and tasteless. Then there is the TX-La debate about if gumbo includes sausage or not. I prefer not but honestly couldn’t tell what other seafood was included. This was really a soup that tasted like gumbo.
The oyster Po-boy was to die for. Very well cooked and delicious. I would have preferred the lettuce shredded instead of just two long stalks of Romaine lettuce harts, but the tomato’s were fresh and the tarter sauce tasty.
